When it comes to roasting, we understand every variety of bean is unique and must be roasted in a way that captures its inherent flavor potential. At Allegro, our dedicated team of roasters pursue this craft using our vintage German-made Probat roasters. Combining their years of experience and zealous focus on process, they employ each of their senses to ensure that every roast meets our demanding standards.

As they pull small samples from the cascading masses inside the drum, they gauge the development of the beans, the color of the smoke emitted from the drum, the sound of the first crack as the beans pop open and double in size, and then carefully monitor and adjust the time and temperature to ensure that each coffee is roasted to perfection.

So, as you sip our fine coffees, the fact that we’ve roasted each variety just so should help transport you to the place where it was grown. This “Taste of Place” represents the many factors that affect the flavor profile of a coffee including its micro-climate, soil type and quality, elevation, amount of sunshine, rainfall, and tree varietal. Given that all these factors subtly affect the taste of our beans, we believe it is not only our obligation but also our art to roast each coffee to harness its purest, most delicious flavor.
